Ingredients:
- 1/2 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 2 tablespoons unsweetened almond milk
- 2 tablespoons melted butter or coconut oil
- 1/2 teaspoon vanilla extract
- Sweetener of choice (stevia, erythritol, or monk fruit), to taste
- Cooking oil or butter for the pan
Instructions:
- In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Ensure there are no lumps, and the dry ingredients are well combined.
- In another bowl, whisk the eggs, almond milk, melted butter (or coconut oil), vanilla extract, and your choice of sweetener until well mixed.
- Combine the wet and dry ingredients, stirring until a smooth batter forms. Allow the batter to sit for a few minutes to thicken.
- Preheat a non-stick skillet or griddle over medium heat. Add a small amount of cooking oil or butter to prevent sticking.
- Pour a portion of the batter onto the hot skillet to make pancakes of your desired size. Use the back of a spoon to spread the batter evenly.
- Cook the pancakes until bubbles form on the surface, then flip them and cook the other side until golden brown.
- Continue cooking the remaining pancakes, adding more oil or butter to the skillet as needed.
- Serve your Keto Pancakes with your favorite low-carb toppings, such as sugar-free syrup, whipped cream, or fresh berries.
