Ingredients:

For the Pizza Crust:

  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 1/2 cups almond flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Topping:

  • 1/2 cup sugar-free marinara sauce
  • 1/2 cup cooked and crumbled sausage
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large eggs
  • Chopped fresh parsley for garnish (optional)

Instructions:

For the Pizza Crust:

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second increments, stirring in between, until the cheeses are melted and well combined.
  3. Add the almond flour, large egg, garlic powder, salt, and pepper to the melted cheese mixture. Mix until a dough forms.
  4. Place the dough between two sheets of parchment paper and roll it out into a circular shape, about 1/4-inch thick.
  5. Transfer the rolled-out dough, with the bottom parchment paper, onto a pizza stone or baking sheet. Bake in the preheated oven for 8-10 minutes or until it starts to turn golden.

For the Topping:

  1. Once the crust is partially baked, remove it from the oven and spread the sugar-free marinara sauce evenly over the crust.
  2. Sprinkle the cooked and crumbled sausage, shredded cheddar cheese, and shredded mozzarella cheese over the sauce.
  3. Create four small wells in the cheese and crack an egg into each well.
  4. Return the pizza to the oven and bake for an additional 10-12 minutes or until the eggs are set to your liking and the cheese is bubbly and golden.
  5. Remove from the oven, garnish with chopped fresh parsley if desired, and let it cool for a few minutes before slicing and serving.
