Ingredients:

For the Base:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/2 cup creamy peanut butter
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

For the Topping:

  • 1/2 cup sugar-free dark chocolate chips
  • 2 tablespoons creamy peanut butter

Instructions:

For the Base:

  1. In a mixing bowl, combine the almond flour, shredded coconut, and powdered erythritol.
  2. In a microwave-safe bowl, melt the peanut butter and coconut oil together, stirring until smooth. Mix in the vanilla extract and a pinch of salt.
  3. Pour the peanut butter mixture over the dry ingredients. Stir until well combined.
  4. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  5. Press the mixture into the pan evenly using a spatula or your hands.

For the Topping:

  1. In a microwave-safe bowl, combine the sugar-free dark chocolate chips and peanut butter. Microwave in 20-second intervals, stirring in between, until fully melted and smooth.
