Ingredients:
- 2 cups heavy whipping cream
- 8 oz cream cheese, softened
- 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1 1/2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup melted unsalted butter
- 1/4 cup powdered erythritol (for the crust)
- 1/4 tsp salt
Instructions:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add in 1/2 cup of powdered erythritol and vanilla extract, and continue to beat until well combined.
- In a separate mixing bowl, whip the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined. This will be your creamy cheesecake filling.
- In another bowl, combine almond flour, cocoa powder, melted butter, 1/4 cup powdered erythritol, and salt to create the chocolate almond crust.
- In a serving dish or a 9×9-inch square pan, layer half of the chocolate almond crust as the base.
- Spread half of the cheesecake filling over the crust.
- Layer half of the sliced strawberries on top of the filling.
- Repeat the layers – crust, filling, strawberries – for the second layer.
- Cover and refrigerate the icebox cake for at least 4 hours or overnight to allow it to set.
- Before serving, garnish with extra strawberries and a sprinkle of cocoa powder if desired.
Note: This dessert is not only keto-friendly but also incredibly delicious. Each serving is approximately 280 kcal.
