Ingredients:

  • 2 cups shredded zucchini (about 2 medium zucchinis)
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or sweetener of choice
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a muffin tin with paper liners or grease it with cooking spray.
  2. Shred the zucchinis using a grater or a food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large mixing bowl, combine the almond flour, coconut flour, granulated erythritol, baking powder, ground cinnamon, ground nutmeg, and salt. Mix well.
  4. In a separate bowl, whisk together the eggs, melted unsalted butter, unsweetened almond milk, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until a batter forms.
  6. Gently fold in the shredded zucchini, ensuring it’s evenly distributed throughout the batter.
  7. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
